    Everyone has their own approach. To say “barbecue sauce sucks” is a bit generalized given the fact that it is a $1 billion market annually. The key is to layer the flavors when sauce is used and to NOT add the sauce till the end, resulting in carmelization. Sometimes I use sauce, sometimes I don’t.
